Brunch Sunday before my Seattle Seahawks earned their way to the Super Bowl.  Oops, I mean The Big Game!!  I think I’m still in shock quite frankly.  But to get ready for the game, I had a healthy Dukan Diet recipe breakfast!  Hope everyone had as great of a weekend as I did.

TURKEY SAUSAGE SCRAMBLE WITH STUFFED JALAPENOS

2 whole eggs
3 egg whites
1 turkey sausage
1/2 small onion, sliced

Brown the sausage and onion in a non-stick skillet.  Add eggs and voila.  It’s that simple.

Turkey Sausage and Cauliflower

I was really craving pasta the other night but really was trying to be good.  So, this dish absolutely took care of the craving.  Simple and I was eating in about 30 minutes.

TURKEY SAUSAGE AND CAULIFLOWER

1 lb turkey sausage, removed from casings
1/2 onion, chopped
1 head of cauliflower, florets only
1 28 oz can plum tomatoes, chopped
1 t dried basil
1/2 t dried oregano
2 T dried parsley
1 7 oz package Shirataki angel hair
2 T Parmesan cheese, shredded (optional)

Brown the sausage and onion in a bit of cooking spray for 10 minutes, or until sausage is completely cooked.  Add the cauliflower, tomatoes and spices.  Cover and simmer for 15 minutes.  Add the angel hair and season with salt and red pepper flakes.  Bring  back to a simmer and serve with Parmesan cheese.

Well, I thought I hated poached eggs.  I waited for Tom to come home before I made them so that he could enjoy them hot.  Well, I took a bite and had to make one for myself!  It was delicious!  And the sausage was kind of fun to season myself.  I really never thought about doing that before.  The maple syrup was a really nice addition to it.  I think i used too much cayenne pepper though!  So I adjusted the recipe so you guys only use 1/4 teaspoon.  Enjoy breakfast for dinner once in a while!

TURKEY SAUSAGE PATTIES WITH POACHED EGGS

2 lean sweet Italian sausages, casings removed
2 T sugar free maple syrup
1/4 t cayenne pepper
1/4 t cinnamon
1/8 t nutmeg
1/4 t black pepper
1/8 t garlic powder
2 T oat bran

Form 2 patties and brown in a saute pan until fully cooked, about 5-6 minutes per side.

POACHED EGGS

2 eggs
2 t of white vinegar
dash of salt

Heat the water in a deep sauce pan and turn off heat.  Add the salt and vinegar.  Break each egg into a small ramekin.  Swirl water and gently drop eggs into it.  Cover and let cook, untouched for 5 minutes.  Remove with a slotted spoon.

DIO Makeover: Turkey Italian Sausage and Spinach Gratin

The LA Times had a wonderful end-of-the-year article with their Top 10 favorite recipes of the year.  Of course, most of them weren’t diet friendly, or for that matter, even diet-adaptable.  But this one was worth trying.  The picture in the paper was amazing.  I think my version came out pretty darn good.  Save your oat bran allowance for dinner for sure.  It was well worth it!

TURKEY ITALIAN SAUSAGE AND SPINACH GRATIN
(Inspired by Noelle Carter of the LA Times Test Kitchen)

1 lb Turkey Italian Sausage
1/4 cup white wine
2 bunches kale, chopped
2 cups fat free milk
2 T cornstarch mixed with 2 T of the above mentioned milk
1/4 cup goat cheese
1/2 cup fat free cheddar, shredded
1/4 cup fresh parsley, chopped
2 t lemon zest
2 T Parmesan cheese, finely grated

Brown the sausage in a heavy skillet or Dutch oven until fully cooked.  Add the wine and cook til almost evaporated, about 2 or 3 minutes.  Add the kale, one handful at a time until all of it has wilted.  Remove pan from the heat and set aside.  In another pan, whisk the cornstarch into the milk over medium heat and cook for about 10 minutes, or until milk has thickened.  Whisk in the cheddar and goat cheeses until fully melted.  Stir in the sausage and kale.  Pour mixture into a large casserole dish, sprayed with a bit of cooking spray.  In another small bowl, combine the Parmesan, the breadcrumbs, lemon zest and parsley.  Give them a nice spray of cooking spray.  Sprinkle over the top of the casserole.  Bake at 350 for 25-30 minutes.

ITALIAN OAT BRAN BREADCRUMBS

8 T Oat Bran
8 T Wheat Bran
5 T nonfat Greek yogurt
2 eggs or 1/2 cup egg whites
1/2 t salt
pepper
1 t dried parsley
1 t dried basil
1/2 t red pepper flakes
2 T Parmesan cheese, finely grated
1 t baking powder

Pour batter into a square brownie pan.  Bake for 20-25 minutes.  Let cool 10 minutes and scrape it out of the pan with 2  forks.  Let cool completely.  Place crumbles in a food processor and process to breadcrumb consistency.  Then I toasted the breadcrumbs at 350 for 15-20 minutes, until a nice light brown.  Keep unused breadcrumbs in the fridge.

3 servings of oat bran

Serves 8
