FILET MIGNON AND MUSHROOM SPAGHETTI SQUASH CASSEROLE

1 medium spaghetti squash
1 4 oz filet, grilled and chopped into bite-sized pieces
1/2 small onion, chopped
1 yellow bell pepper, chopped
6 oz mushrooms, sliced
1 cup fat free cottage cheese
1/4 cup lowfat or fat free cheese, shredded
1/2 t dried basil
1/4 t dried oregano
2 t dried parsley

Prick squash with a sharp knife in about 8-10 different spots.  Microwave for about 20 minutes, or until it is soft to the touch.  Let cool.  Saute the bacon and leeks in a bit of cooking spray, until the bacon is completely cooked.  Remove the seeds from the squash and throw away.  Remove the squash from the skin and place in a large bowl.  Add the bacon and leeks, the tomatoes, and cheeses.  Season with herbs and salt and pepper.  Spray a casserole dish with a bit of cooking spray and pour mixture into it.  Bake at 375 for 25 minutes or until bubbling.  Let set 5 minutes.

2 small leeks, whites only, chopped (use sweet onions if you can’t find them!)
2 plum tomatoes, seeded and chopped
1 cup fat free cottage cheese
1/4 cup lowfat or fat free cheese, shredded
1/2 t dried basil
1/4 t dried oregano
2 t dried parsley

SPAGHETTI SQUASH WITH ROAST BEEF

 1 spaghetti squash
1/2 cup Real Bacon Bits
1/2 cup fat free cheese (goat, cheddar, whatever you can find)
1/2 cup fresh basil, chopped
1/2 cup fat free cottage cheese

1 3 lb beef roast
minced onion
salt and pepper

Sprinkle the roast with minced onion and salt and pepper.  Place beef on a rimmed cooking sheet and roast your beef in a 225 oven for about 2 hours, depending on how well done you want it to be.  You can use a little low-sodium beef broth to baste it occasionally.

Meanwhile, prick your squash with a fork and microwave the entire thing for about 20-25 minutes, flipping over a few times while it’s cooking, or until soft to the touch.  Remove, cut in half, let cool, and remove all the seeds.  In a mixing bowl, combine all the squash ingredients and pour into a casserole dish sprayed with a bit of cooking spray.  Bake at 350 for 35 minutes.

Cajun Chicken and Spaghetti Squash Casserole

This was delicious with the Cajun spices.  It seemed like a weird combination at first, but Tom actually said this was one of his favorite dishes so far on Dukan!  I haven’t talked about Penzeys in a while so if you haven’t checked it out, I definitely think it’s worth your while.  I was just there this weekend and picked up something new.  Toasted minced onions.  They smelled so fabulous I just had to buy them!  If you don’t have one near you, check them out online.  They can completely change a dish.

CAJUN CHICKEN AND SPAGHETTI SQUASH CASSEROLE


1 lb ground chicken breast, browned and crumbled
1-2 t cajun spices, recipe below
1/2 roasted spaghetti squash, recipe below
2 T dried red bell pepper, like the kind of Penzey’s
1 cup fat free cottage cheese
2 T oat bran
1 t Parmesan cheese, finely grated
salt and pepper

Mix all the ingredients down to the oat bran, in a large bowl.  Season with salt and pepper.  Pour mixture into a small casserole dish and sprinkle the top with the oat bran and then the Parmesan.  Bake at 350 for 25-30 minutes.

ROASTED SPAGHETTI SQUASH

Cut the spaghetti squash in half lengthwise, scoop out the seeds, and roast at 350, cut side down on a cookie sheet, for 45 minutes.

CAJUN SPICE MIX

1 T granulated garlic
1 T granulated onion
1 T smoked paprika
2 t fresh thyme, chopped
2 t dried oregano
2 t pepper
2 t salt

Mix all ingredients together and store in an airtight container.

Chicken with Spaghetti Squash, Bacon and Leeks

For those of you moving on to Cruise, here’s a good Protein Vegetable recipe for you.  My squash was so big I made two recipes out of it.  Thanks farmfreshtoyou.com for delivering such beautiful squashes and leeks to me!!  How could I go wrong with this?

CHICKEN WITH SPAGHETTI SQUASH, BACON AND LEEKS

1/2 large spaghetti squash, roasted (directions below)
1/2 cup cottage cheese
1/4 cup fat free cheese, shredded
1 cup shredded chicken
2 leeks, whites only, sliced
2 slices turkey bacon
2 T dried red bell pepper
1t red pepper flakes

Carve out the spaghetti squash trying to keep the shell intact.  Mix all ingredients together in a large bowl and pour into the reserved squash shell.  Bake at 350 for 25 minutes.

Cut the spaghetti squash in half lengthwise, scoop out the seeds, and roast at 350, cut side down on a cookie sheet, for 45 minutes.
