Grilled Maple/Soy Salmon

I’m at my place in the desert this weekend and what better to do than barbecue!  This was simple and delicious…I hope you all have as great a weekend as I’m having!!  Now get in that kitchen and whip up a Dukan Diet recipe or two!!

GRILLED MAPLE/SOY SALMON

1/3 cup soy sauce
1/3 cup maple syrup (sugar free for those of you early phaser Dukaners)
4 salmon fillets, with skin
Lemon wedges, for serving

Combine the soy and maple.  Reserve a little less than half, to reduce down for a glaze to serve with.  Pour the rest of the sauce in a glass dish and place the salmon, skin side up, over the marinade.  Cover and refrigerate for about 20-30 minutes or until you have the rest of the meal ready to grill.  Salt and pepper the salmon and sear the it over a very hot grill, for one minute, skin side up.  Then flip and sear the skin side for about 3 minutes.  Move the salmon off the direct heat and cook until desired doneness, 1-2 minutes for medium, 3-5 for well done.  While you grill the salmon, add 2 more tablespoons of maple syrup to the reserved marinade and pour it all into a small saucepan.  Reduce the sauce over medium heat until thickened, about 3-5 minutes.  Serve salmon with a bit of glaze drizzled over it.

Skip the sauce if you’re looking for a Dukan Diet recipe for the Attack phase or Pure Protein day.  These were delicious.  I used fresh salmon but it’s not necessary.  They’re awesome by themselves or with the sauce.  And the sauce would be fabulous on lots of things!  I may try roasting chicken in the leftover sauce I have!

SALMON PATTIES WITH RED PEPPER SAUCE

1 can salmon, drained well or 1/2 lb fresh salmon, finely chopped
1 egg, whisked well with a fork
1/4 cup oat bran
2 T onion, finely chopped
1 clove garlic, finely minced
salt and pepper

Mix all ingredients in a small bowl and form two patties.  Grill in a grill pan with a bit of cooking spray for 5-6 minutes per side.  Serve with sauce

FOR THE SAUCE

1 jar of roasted red peppers
1 eggplant, cubed
1 small onion, chopped
3 plum tomatoes, chopped
2 T tomato paste
2 cloves garlic, minced
2 T dried parsley
salt and pepper

In a saucepan add all the ingredients plus a half a cup of water.  Cook, covered, over low head for 45 minutes or until all vegetables are soft (you may have to add water if sauce gets too thick).  Remove from heat and let cook for 20 minutes.  Lightly chop the sauce in a food processor until sauce is chunky.  Reheat or serve at room temperature over salmon.

I made these this morning and they were delicious. Only sorry I didn't have some Dukan bread to eat more for lunch!

SMOKED SALMON EGG SALAD LETTUCE WRAP

2 eggs, cooked and chopped
2 whites of eggs, cooked and chopped
2 oz smoked salmon, chopped
1 onion, chopped
1 t Jalapeno, chopped
2 T fat free sour cream
2 T fat free cheese, room temperature
A few drops of mustard and hot sauce
2 cups of lettuce

Mix the sour cream and whole cream cheese in a small bowl. Add the rest of ingredients and mix gently. Sour cream with season and serve in a bowl or a cup of lettuce on a day of PV simply a day of PP!
