My friends Baghwant and Sahar were visiting me this weekend and it was a great weekend of feasting and learning about new foods and cooking techniques for me.  Thanks Baghwant!  One of the first things I learned about was this delicious cheese called Halloumi.  From Cyprus, it’s a semi-hard, unripened brined cheese made from a mixture of goat’s and sheep’s milk, sometimes adding cow’s milk as well.  It’s even better if you can find the “light” version!  I know a lot of you don’t eat cheese on the Dukan Diet but I have to tell you I was completely successful eating it the first time, trying to find as low fat cheeses as possible, and I made my goat weight on time.  When I add cheese to my recipes, aside from them being low fat, I make sure that the other ingredients and the protein are as low fat as they can be.

With that said, cheese is one of my choices to make this lifestyle work for me.  You may find other things that you can’t live without.  At any rate, for those who are eating cheese, these are fabulous!!  You can fry and grill this cheese too.  It’s wonderful with eggs as I had them on an omelette this weekend!

Dukan Diet Recipe Halloumi Cheese Meatballs Halloumi Cheese Meatballs

HALLOUMI CHEESE MEATBALLS

1 lb ground turkey breast
1 egg white
2 T oat bran
1/4 cup red onion, finely chopped
1 small serrano pepper, finely chopped
1/2 cup fat free cottage cheese
2 oz Halloumi cheese, small-cubed

Mix all ingredients together in a bowl using hands, careful not to handle too much.  Form 15 large meatballs and cook at 400 for 20 minutes.

Mexican Super spicy meatballs

I know, I know... over meatballs.  But I needed a good recipe of yesterday who wanted to keep me on track.  Oh my God, they were spicy (easy to make them less!) and delicious!  I ate a whole book.  Well... as long as you follow the diet, biting!

MEXICAN SUPER SPICY MEATBALLS

ground Turkey 1 1/4 lb
1/2 cup oak bran
1 egg
1 jalapeno, chopped
1/2 small onion, chopped
six slices of spicy, chopped carrots (I found mine by the cheese in the refrigerated section, but you can find canned salsa too!)
2 string cheese lite, chopped
1 Cup sauce adobo a can of chipotle peppers
1/2 cup fat free cheese
1 t salt
1/2 cup ancho chili powder
1/4 cup coriander, chopped

Mix all ingredients by hand, careful not to handle too.  Make 4 dozen small meatballs and bake at 400 for 15 minutes.  Remove and brush with Sauce Chipotle-Maple on them and cook for another 5 minutes.  Serve with additional sauce.

SAUCE CHIPOTLE-MAPLE

1/4 cup sugar free maple syrup
1 4 oz can of chipotle peppers

Pulse in a food processor or blender until blended and pieces are missing.  Save the extra sauce in the refrigerator.

I know, I know…more meatballs.  But I needed a good recipe for yesterday that would keep me on track.  Oh my god, these were spicy (easy to make them less!) and delicious!  I ate about a half a pound.  Oh well…as long as you’re following the diet, eat away!!

SUPER SPICY MEXICAN MEATBALLS

1 1/4 lb ground turkey
1/2 cup oak bran
1 egg
1 jalapeno, chopped

It is not a secret that I love balls!  I said out loud?  In any event, these do not disappoint.  I do not use chicken much, but they were really well with a small cheese and all the dried tomato and Basil goodness Sun.

1 egg substitute egg or 1/4 cup
1/3 cup oat bran
dried tomatoes 1/4 cup, reconstituted or well drained and chopped
1/4 cup fresh basil, chopped
1/4 cup fat free cottage cheese
1/2 cup fat free mozzarella, shredded
salt and red pepper flakes

Mix all the ingredients by hand, careful not to deal too.  On a cookie sheet, bake more small pellets of 15 minutes, larger for 22-25, 400.

Aperitif, 4 as one entry serves 6
