Canton Chicken Tender Chow Mein

I always love Chinese food.  And this dish didn’t disappoint.  Even with the Shirataki noodles, it still was very satisfying and replaced all the cravings I was having for noodles.  Happy Friday everyone!

CANTON CHICKEN TENDER CHOW MEIN

3/4 lb chicken tenders or thighs
1 small red bell pepper, thinly sliced
5 green onions, cut into 2-inch pieces
1 clove garlic, minced
1 t fresh ginger, minced
1 package Tofu Shirataki spaghetti noodles
1/4 cup low sodium soy sauce
3 T sherry
1 t cider vinegar
1 t Splenda or 2 T honey (Consolidation and Stabilization)
1 t chili paste
1/4 cup cilantro, chopped
1 cup snow peas
1 green onion, chopped

Spray skillet with a bit of cooking spray.  Add chicken, bell pepper, green onions, garlic, ginger and noodles and stir-fry until chicken is nicely browned, about 4 minutes.  Combine remaining ingredients down to the peas in a small bowl and stir into chicken with the snow peas, and cook 3-4 minutes.  Stir in cilantro.  Garnish with green onions.
