Spicy chicken, mushrooms and snow peas

Another dish very simple, but delicious. Very few ingredients and only 20 or so minutes and you have an Asian dish on the table. Today is my mom's 80th birthday so happy birthday MOM!

SPICY CHICKEN, MUSHROOMS AND SNOW PEAS

4 chicken thighs or chicken, cubed 3 breasts
1 cup mushrooms, decided
2 T white vinegar
1 cup low sodium chicken broth
Sake of T 2
1 t Splenda or 1 T brown sugar Splenda
Pulp Chile garlic 1 T
1/2 t red pepper flakes
T low sodium soy sauce 2
Cornstarch T 1 mixed with 1 t water
2 cups peas, trimmed of snap
2 green onions, chopped

Add chicken and mushrooms and the return in a hot pan a little cooking spray, about 5 minutes or until nice and brown.  Mix next 7 ingredients in a small bowl and add to the pan.  Simmer for about 10 minutes, or until the chicken is fully cooked.  Add pea mixture and the snap of cornstarch and cook for about 3-5 minutes, until the sauce has thickened.  Garnish with green onions.
