Turkey Chipotle Sliders

I found a really cool square muffin pan on sale at Albertsons for only 2 bucks after the holidays and have had a ball with it!  Can you believe this is a Pure Protein recipe?  Huh?  I’m trying to help out all of you that are just starting out the diet but the Protein Vegetable recipes are coming probably tomorrow.  The salsa is a dream, not spicy and really replaces ketchup for me without the sugar.  Tom ate these with me the other night for dinner and didn’t even know they were for the diet.  I can’t imagine anyone in your family knowing!  Serve them with a salad and they’ll think it was the best meal they’ve ever had!!

TURKEY CHIPOTLE SLIDERS

1 lb ground turkey
1 egg
1/4 cup oat bran
1/2 cup fat free cheddar cheese, shredded
1 T minced onion
1/2 t garlic powder
1/2 t chili powder
1/2 t Spanish smoked paprika
1 t salt
1/2 t pepper

Mix all ingredients by hand, careful not to handle too much.  Form 8 square patties and cook them on a grill pan until completely cooked, about 5 minutes per side.

SLIDER BUNS

8 T oat bran
8 T wheat bran
2 eggs and 2 egg whites
2 T fat free cream cheese
2 T fat free cheddar, grated
2 T Greek yogurt
1/2 t minced onion
1/2 t garlic powder
1/2 t Spanish smoked paprika
1 t baking powder
1/4 t salt
1/4 t pepper

Mix all the wet ingredients together in one bowl.  Mix all the dry in another.  Fold the dry into the wet until mixed.  Divide the batter into 8 muffin tins, sprayed with a bit of cooking spray.  Bake at 350 for 16-18 minutes.

Cut buns in half, lenghwise and serve sliders with taco sauce and mustard.

I LOVE this taco sauce I found.  It’s not spicy (the regular taco sauce is even less spicy) and it’s the perfect replacement for ketchup–without the sugar!!

Makes 8 sliders, 4 servings of oat bran
